OLEUM FLUMEN was created in 2003 on a small estate called Coll Roig, in the heart of Les Garrigues. Surrounded by small mountains, the estate is protected from the winter cold and fog, and has the necessary freshness during the summer. As well as this privileged setting, Oleum Flumen has also respected the areas where the oldest olive trees stand so as to tend and take especial care of them during their latter years. By doing this they can offer a very especial type of oil: olive oil from century old olive trees.

Oleum Flumen has waged on elaborating its products by methods of production that combine traditional and modern techniques. This type of cultivation constitutes a stage between modern day agriculture (that gives priority to large crops) and ecological agriculture. The company uses low ecological impact methods following the guidelines set by the “Consejo Regulador de Producción Integrada de Catalunya”, the public institution in Catalunya (Spain) that regulates this type of cultivation.

At Cal Roig natural resources and natural mechanisms are used to their maximum potential so as to ensure sustained growth in the future. Biological methods and chemical processes are carefully chosen and reduced to the necessary minimum. This creates the perfect balance between taking care of the environment, profitability and social demands.  Consumers are becoming more and more demanding and aware and want high quality products whose production is strictly supervised from the beginning to the end.

OLEUM FLUMEN’S PRODUCTS: A TOUCH OF FLAVOUR ON YOUR PLATE

All of OLEUM FLUMEN’s products originated from carefully kept fields and made following the strictest quality controls. An excellent group of workers take care of the estate, the production and the surrounding environment. The outcome of these efforts is a large variety of high quality products that can be used for professional or home cooking.

EXTRA VIRGIN OIL FROM THE GARRIGUES AREA

This Virgin Extra Olive Oil comes from the variety Arbequina olives. These olives are directly gathered from the tree at their peak point of ripeness, giving them a unique fragrance and flavour. By harvesting the olives a little later, this oil is yellow in colour, has a sweeter taste and is not as dense as the one produced in the Siurana area. It has a maximum acidity of 0, 2.

How to use in cooking: we recommend its use for vinaigrettes, salads, vegetables, to season boiled or grilled fish. It is also used with meat or poultry.

EXTRA VIRGIN OIL FORM SIURANA AREA

This extra virgin oil is obtained from the fruits of trees of the Olea Europaea variety. The Arbequina olives that come from these trees are gathered by mechanical procedures that don’t alter the olive’s qualities. This oil is the unfiltered juice of the olives. It has a fruity flavour and, due to the early harvesting of the olives, it is green in colour. Its texture and taste remind us of sour almonds, and its maximum acidity is 0’2.

How to use in cooking: we recommend it for vinaigrettes and for seasoning fish roasted in the oven and all types of meat.

100 % HAZELNUT EXTRA VIRGIN OIL

This oil is obtained with the fruit that grows on Crylus Avellana hazelnut trees. The hazelnuts used in making the oil are carefully chosen by hand. This oil has a relatively sweet taste and a bouquet that fills out and finally leaves a fine hazelnut taste in your mouth. It is of a yellow golden colour.

How to use in cooking: this oil has a very large variety of applications in all types of dishes.  We can add this oil to season any vegetable, grilled or carapaccio dish. A spoonful of this oil adds especial flavour to the dough of your best oven cooked desserts also makes a lovely mayonnaise.

100% ALMOND EXTRA VIRGIN OIL

The unique flavour of this oil is obtained thanks to the careful harvesting of the almonds. It has a light bouquet and a slightly bitter taste that leaves the flavour of fruit in your mouth. It is of a bright and translucent yellowish colour.

How to use in cooking: we recommend it for mushrooms, preserved vegetables, boiled or grilled fish. We can also substitute a large variety of sauces by just adding a bit of this oil to any dish. Delicious with fruit such as baked peaches.

WHITE WINE VINEGAR

It is one of the most widely used vinegars in local Catalan cuisine.  ACETUM FLUMEN makes this high quality product out of the fruit of old and carefully kept vines.

How to use in cooking: we recommend it for the seasoning of salads, for pickled dishes, seafood and various types of meat.

APPLE VINEGAR

It is elaborated out of excellent quality cider. It has an extraordinarily unique taste thanks to the elaboration process that doesn’t alter the taste or odour of apples. It has a low acidity and it is of a yellow orange colour.

How to use in cooking: we recommend this vinegar for all of your pork dishes. It is also excellent for any sweet tasting dishes.

WINE VINEGAR WITH WHITE GARLIC

The whole garlic is introduced into the bottle of vinegar after being carefully selected and peeled. In this way the vinegar acquires a subtle and unique taste of garlic without masquerading the vinegar’s flavour.

How to use in cooking: garlic is one of the most used herbs used in cooking. We can recommend this vinegar for all foods that are served raw (salads, vegetables…) Fantastic with baked or grilled fish as a final touch.

PURE VIRGIN OLIVE OIL: GOLDEN HEALTH

Talking about a Mediterranean diet is synonym of health. One of the basic requirements of the Mediterranean diet is olive oil. The olive juice obtained from the first press, keeps all the flavour and the nutritive properties of the oil. Amongst its components oleic acid stands out. It is extremely beneficial because it lowers the “bad” cholesterol (LDL) and maintains, or even increases the “good” cholesterol (HDL).

If taken following the daily recommended quantities, olive oil presents the following advantages:

–        Digestive System: the functioning of the stomach and the pancreas gets better and it makes the digestion run properly.

–        Circulatory System: It helps to prevent arteriosclerosis and heart diseases.

Ways of using

Pure Virgin Olive oil is characterized for its versatility, far away from the existing topics.  It is perfect to use for dressings and highly recommended for frying.

When frying with olive oil, it is important to warm the oil slowly, and never let it smoke. Also, once frying is finished, the oil should be filtered to eliminate the food residue, because if not, these leftover particles of food accelerate the process of degradation.

If these recommendations are properly followed, pure olive oil can be used up to 5 or 6 times.

Ways of Storing

A correct storage of the oil can assure you the perfect maintenance of its properties. Excess of light and heat should be avoided, because it can lead to a loss of colour and flavour. Therefore, the oil should be kept in a place where it has no contact with direct sunlight. If kept it in the fridge, some oils tend to thicken and solidify.

VINEGAR

Ways to use:

Vinegar is the star of all salads, but it is also a fundamental ingredient for other types of dishes; like reductions, sauces or marinades. Also, some drops of vinegar can accentuate the aroma of a huge amount of foods, for example: strawberries.

Ways to store:

Vinegar usually has a long life, so, to keep its characteristics you only have to keep vinegar away from sun light. Nevertheless, apple vinegar has the peculiarity that if kept in the fridge, after some days, a fine veil will form inside the bottle. If this occurs, you only have to filter the vinegar, so that it is still suitable for use.
